🛒 Ingredients
- Fresh Oysters (with liquor) 100 g · 81 kcal
- Whole Milk 200 g · 124 kcal
- Unsalted Butter 15 g · 108 kcal
👨🍳 Instructions
- Gently rinse and shuck the fresh oysters, reserving their liquor. Strain the liquor through a fine-mesh sieve or cheesecloth to remove any shell fragments.
- In a heavy-bottomed saucepan, melt the unsalted butter over medium heat. Be careful not to brown it.
- Add the reserved oyster liquor and whole milk to the saucepan. Heat gently until the mixture is hot and steaming, but do not bring it to a boil.
- Add the fresh oysters to the hot milk mixture. Cook for only 2-3 minutes, just until the edges of the oysters begin to curl and they plump up.
- Season the stew with salt and freshly ground black pepper to taste. Serve immediately, garnished with a sprinkle of paprika or fresh chopped parsley if desired.
