  • Fresh Oysters (with liquor) 100 g · 81 kcal

👨‍🍳 Instructions

  1. Gently rinse and shuck the fresh oysters, reserving their liquor. Strain the liquor through a fine-mesh sieve or cheesecloth to remove any shell fragments.
  2. In a heavy-bottomed saucepan, melt the unsalted butter over medium heat. Be careful not to brown it.
  3. Add the reserved oyster liquor and whole milk to the saucepan. Heat gently until the mixture is hot and steaming, but do not bring it to a boil.
  4. Add the fresh oysters to the hot milk mixture. Cook for only 2-3 minutes, just until the edges of the oysters begin to curl and they plump up.
  5. Season the stew with salt and freshly ground black pepper to taste. Serve immediately, garnished with a sprinkle of paprika or fresh chopped parsley if desired.
