👨🍳 Instructions
- Prepare the aromatics: finely chop the onion, green chilies, and grate or paste the ginger and garlic.
- Heat vegetable oil in a pan over medium heat. Add mustard seeds and curry leaves; let them splutter.
- Add the chopped onion and sauté until it turns translucent and lightly golden.
- Stir in the ginger-garlic-chili paste and cook for another minute until fragrant.
- Add the chopped tomato and cook until it softens and the oil begins to separate from the mixture.
- Stir in turmeric powder, chili powder, coriander powder, and cumin powder. Cook for 30 seconds, stirring constantly.
- Pour in the coconut milk and water, mix well, and bring to a gentle simmer. Cook for 5 minutes, allowing the flavors to meld.
- Add the peeled prawns to the simmering curry. Cook for 3-5 minutes, or until they turn pink and opaque.
- Remove from heat, stir in fresh lemon juice. Serve hot with rice or naan bread.
