👨🍳 Instructions
- Press the firm tofu to remove excess water, then cut it into 1-inch cubes. Chop the bell pepper, trim the green beans, and drain the bamboo shoots.
- Heat vegetable oil in a large pot or wok over medium heat. Add the red curry paste and stir-fry for 1-2 minutes until fragrant.
- Pour in the coconut milk and water, stirring well to combine with the curry paste. Bring the mixture to a gentle simmer.
- Add the tofu cubes, bell pepper, green beans, and bamboo shoots to the simmering curry. Cook for 8-10 minutes, or until the vegetables are tender-crisp.
- Stir in the gluten-free soy sauce, brown sugar, and lime juice. Taste and adjust seasoning as needed.
- Remove from heat and stir in fresh basil leaves just before serving. Serve hot, optionally with steamed jasmine rice.
