👨🍳 Instructions
- Clean all seafood thoroughly: scrub mussels and clams, devein shrimp, clean squid and cut into rings. Set aside.
- Bring a large pot of salted water to a boil for the pasta.
- In a large skillet, heat olive oil over medium heat. Add sliced garlic and a pinch of red chili pepper (if using), sauté until fragrant, about 1-2 minutes.
- Add the squid and shrimp to the skillet; cook for 2-3 minutes until they start to turn opaque.
- Pour in the white wine and let it evaporate for a minute. Then add cherry tomatoes, stir, and cook for another 3-4 minutes.
- Add mussels and clams to the skillet, cover with a lid, and cook until they open, shaking the pan occasionally (discard any unopened shells).
- While the seafood is cooking, add the Scialatielli pasta to the boiling water and cook according to package instructions until al dente.
- Drain the pasta, reserving about half a cup of pasta water. Add the cooked pasta directly to the seafood sauce in the skillet.
- Toss everything together, adding a splash of reserved pasta water if the sauce is too dry. Finish with freshly chopped parsley and serve immediately.
