👨‍🍳 Instructions

  1. Clean all seafood thoroughly: scrub mussels and clams, devein shrimp, clean squid and cut into rings. Set aside.
  2. Bring a large pot of salted water to a boil for the pasta.
  3. In a large skillet, heat olive oil over medium heat. Add sliced garlic and a pinch of red chili pepper (if using), sauté until fragrant, about 1-2 minutes.
  4. Add the squid and shrimp to the skillet; cook for 2-3 minutes until they start to turn opaque.
  5. Pour in the white wine and let it evaporate for a minute. Then add cherry tomatoes, stir, and cook for another 3-4 minutes.
  6. Add mussels and clams to the skillet, cover with a lid, and cook until they open, shaking the pan occasionally (discard any unopened shells).
  7. While the seafood is cooking, add the Scialatielli pasta to the boiling water and cook according to package instructions until al dente.
  8. Drain the pasta, reserving about half a cup of pasta water. Add the cooked pasta directly to the seafood sauce in the skillet.
  9. Toss everything together, adding a splash of reserved pasta water if the sauce is too dry. Finish with freshly chopped parsley and serve immediately.
