👨‍🍳 Instructions

  1. In a large pot or Dutch oven, cook the rendered bacon over medium heat until crispy; remove bacon and set aside, reserving 1 tablespoon of drippings.
  2. Add butter to the pot, then sauté diced onion, celery, and minced garlic in the drippings until softened, about 5-7 minutes.
  3. Stir in the diced potatoes and fish broth; bring to a simmer, then cover and cook for 10-15 minutes until potatoes are tender.
  4. Pour in the whole milk and heavy cream, stirring well. Add the cod, shrimp, and drained clams; cook for another 5-7 minutes until seafood is opaque and cooked through.
  5. Season with salt and pepper to taste. Ladle the chowder into bowls, garnish with reserved crispy bacon and fresh chopped parsley, and serve immediately.
