👨🍳 Instructions
- In a large pot or Dutch oven, cook the rendered bacon over medium heat until crispy; remove bacon and set aside, reserving 1 tablespoon of drippings.
- Add butter to the pot, then sauté diced onion, celery, and minced garlic in the drippings until softened, about 5-7 minutes.
- Stir in the diced potatoes and fish broth; bring to a simmer, then cover and cook for 10-15 minutes until potatoes are tender.
- Pour in the whole milk and heavy cream, stirring well. Add the cod, shrimp, and drained clams; cook for another 5-7 minutes until seafood is opaque and cooked through.
- Season with salt and pepper to taste. Ladle the chowder into bowls, garnish with reserved crispy bacon and fresh chopped parsley, and serve immediately.
