  1. Clean all seafood thoroughly under cold running water. For calamari, separate bodies from tentacles and slice bodies into rings.
  2. Bring a large pot of salted water to a rolling boil. Blanch each type of seafood separately for 1-3 minutes until just cooked through and tender, then immediately transfer to an ice bath to stop the cooking.
  3. Once cooled, drain the seafood well and pat dry. In a large bowl, combine the cooked seafood, chopped celery, halved cherry tomatoes, minced garlic, and chopped fresh parsley.
  4. Drizzle with extra virgin olive oil and fresh lemon juice. Season generously with salt and pepper to taste, then toss gently to combine.
