👨🍳 Instructions
- Prepare the ingredients: Cook shrimp, peel, and slice in half lengthwise; cook vermicelli noodles according to package directions, then rinse with cold water and drain well.
- Prepare the dipping sauce (Nuoc Cham): In a small bowl, combine fish sauce, lime juice, water, sugar, minced garlic, and sliced chili pepper; stir until sugar dissolves.
- To assemble a spring roll: Dip one rice paper wrapper in warm water for 15-20 seconds until pliable, then lay it flat on a clean surface.
- Arrange a small amount of lettuce, vermicelli, cucumber, mint, cilantro, and 3-4 shrimp halves in the center of the bottom third of the wrapper.
- Fold the bottom edge of the wrapper over the filling, then fold in the sides tightly. Roll it up firmly from the bottom to create a neat spring roll.
