Soba with Tofu

👨🍳 Instructions
- Press excess water from tofu, cut into 1-inch cubes, and toss with cornstarch.
- Heat sesame oil in a pan over medium-high heat, then pan-fry tofu until golden brown and crispy on all sides; set aside.
- In a saucepan, combine vegetable broth, soy sauce, and mirin; bring to a simmer.
- Cook soba noodles according to package instructions until al dente, then drain and rinse briefly under cold water to prevent sticking.
- Add spinach to the simmering broth and cook until just wilted, about 1-2 minutes.
- Divide the cooked soba noodles among serving bowls, pour the hot broth with spinach over the noodles.
- Top each bowl with the pan-fried tofu cubes and garnish with freshly sliced green onions and a sprinkle of sesame seeds.
