👨‍🍳 Instructions

  1. Press excess water from tofu, cut into 1-inch cubes, and toss with cornstarch.
  2. Heat sesame oil in a pan over medium-high heat, then pan-fry tofu until golden brown and crispy on all sides; set aside.
  3. In a saucepan, combine vegetable broth, soy sauce, and mirin; bring to a simmer.
  4. Cook soba noodles according to package instructions until al dente, then drain and rinse briefly under cold water to prevent sticking.
  5. Add spinach to the simmering broth and cook until just wilted, about 1-2 minutes.
  6. Divide the cooked soba noodles among serving bowls, pour the hot broth with spinach over the noodles.
  7. Top each bowl with the pan-fried tofu cubes and garnish with freshly sliced green onions and a sprinkle of sesame seeds.
