👨🍳 Instructions
- Soak soya chunks in hot water for 15-20 minutes until soft, then drain completely and squeeze out excess water. Set aside.
- Heat vegetable oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onion and green chili, sauté until the onion turns golden brown. Then add ginger-garlic paste and cook for another minute until aromatic.
- Stir in turmeric powder, coriander powder, red chili powder, and salt. Cook for a minute, stirring constantly, adding a splash of water if needed to prevent burning.
- Add chopped tomatoes and cook, mashing occasionally, until they soften and the oil separates from the masala, about 5-7 minutes.
- Add the squeezed soya chunks and water. Bring to a boil, then reduce heat, cover, and simmer for 10-12 minutes, allowing the flavors to meld.
- Finally, stir in garam masala and fresh coriander leaves. Serve hot with rice or bread.
