👨🍳 Instructions
- Clean the squid by removing the guts, skin, and cartilage; slice the body into rings and score the tentacles, then set aside to drain.
- Prepare the vegetables: thinly slice the onion and carrot, mince the garlic and ginger, and chop the green onions into 2-inch pieces.
- In a bowl, combine gochujang, gochugaru, soy sauce, sugar, minced garlic, and minced ginger to create the spicy sauce.
- Heat a large pan or wok over medium-high heat with a tablespoon of cooking oil, then add the sliced onions and carrots and stir-fry for 2-3 minutes until slightly softened.
- Add the prepared squid to the pan and stir-fry for 1-2 minutes until it starts to curl and turn opaque.
- Pour the spicy sauce over the squid and vegetables, stir well to coat evenly, and continue to cook for another 2-3 minutes, allowing the sauce to thicken slightly.
- Stir in the chopped green onions and a drizzle of sesame oil, then remove from heat.
- Serve immediately, garnished with toasted sesame seeds, often with a side of steamed rice.
