👨🍳 Instructions
- Press and cut the tempeh: Gently press the tempeh block with paper towels to remove excess moisture, then cut it into 1-inch cubes.
- Sauté tempeh: Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add tempeh and cook until golden brown on all sides, about 5-7 minutes; remove and set aside.
- Build the flavor base: In the same pot, add onion and cook until softened, about 3-4 minutes. Stir in garlic, ginger, and curry paste; cook for 1 minute until fragrant.
- Simmer the curry: Pour in coconut milk and vegetable broth, then add sliced bell pepper, tamari, and maple syrup (if using). Bring to a simmer, then reduce heat to low and cook for 10 minutes, stirring occasionally.
- Finish the curry: Add the cooked tempeh and spinach to the pot, stirring until spinach wilts. Stir in fresh lime juice, taste, and adjust seasoning as needed.
