  1. Press extra-firm tofu to remove excess water, then crumble it into small pieces. Heat vegetable oil in a pan over medium-high heat and cook the crumbled tofu until golden brown and slightly crispy, about 8-10 minutes. Set aside to cool slightly.
  2. While the tofu cools, prepare the dressing: In a small bowl, whisk together the fresh lime juice, gluten-free tamari, maple syrup, and red chili flakes.
  3. In a large mixing bowl, combine the cooked tofu, the prepared dressing, toasted rice powder, thinly sliced shallots, fresh mint leaves, fresh cilantro, and chopped green onions.
  4. Gently toss all ingredients to ensure they are thoroughly combined and coated with the dressing.
  5. Serve the Tofu Larb immediately with fresh butter lettuce leaves and cucumber slices on the side, using the lettuce as wraps.
