👨🍳 Instructions
- Press the extra-firm tofu for 15-20 minutes to remove excess water, then cut it into 1-inch cubes.
- In a bowl, combine 15g gluten-free soy sauce, 4g brown sugar, 3g lime juice, 3g minced garlic, 3g grated ginger, and all of the turmeric, cumin, and coriander powder to make the marinade. Add 1.5g sesame oil to the marinade.
- Add the tofu cubes to the marinade, toss gently to coat, and let it marinate for at least 20 minutes (or up to 2 hours in the refrigerator).
- While the tofu marinates, prepare the peanut sauce. In a small saucepan, whisk together 16g natural peanut butter, 25g light coconut milk, 5g gluten-free soy sauce, 5g lime juice, 5g brown sugar, 2g minced garlic, 2g grated ginger, and 1g chili paste. If the sauce is too thick, add a tablespoon of water.
- Bring the peanut sauce to a gentle simmer over medium-low heat, stirring constantly for 3-5 minutes until it thickens slightly. Remove from heat and set aside.
- Thread the marinated tofu cubes onto wooden or metal skewers. Preheat a grill, grill pan, or large non-stick skillet over medium-high heat.
- Cook the tofu skewers for 8-12 minutes, turning occasionally, until golden brown and slightly charred on all sides. Brush with a little extra sesame oil during cooking if desired.
- Serve the Tofu Satay skewers hot, generously drizzled with the warm peanut sauce. Garnish with chopped peanuts, fresh cilantro, and lime wedges for an authentic touch.
