👨🍳 Instructions
- Soak the stale bread in water until soft, then squeeze out excess water and set aside.
- In a blender, combine the soaked bread, coconut milk, ground peanuts, ground cashews, and a small amount of fish broth; blend until smooth.
- Heat dendê oil in a large pot over medium heat, then sauté finely chopped onion, garlic, ginger, and red bell pepper until fragrant.
- Add the blended mixture to the pot, stirring constantly to prevent sticking, and cook until the mixture thickens into a creamy paste.
- Add the raw shrimp to the vatapá, stirring gently until they are cooked through and turn pink, about 3-5 minutes.
- Season with salt to taste and a pinch of sugar if desired; stir in fresh cilantro just before serving.
- Serve hot, traditionally with white rice or acarajé.
