  3. Heat dendê oil in a large pot over medium heat, then sauté finely chopped onion, garlic, ginger, and red bell pepper until fragrant.
  4. Add the blended mixture to the pot, stirring constantly to prevent sticking, and cook until the mixture thickens into a creamy paste.
  5. Add the raw shrimp to the vatapá, stirring gently until they are cooked through and turn pink, about 3-5 minutes.
  6. Season with salt to taste and a pinch of sugar if desired; stir in fresh cilantro just before serving.
