👨🍳 Instructions
- Pick through the beans to remove any debris. Rinse thoroughly and soak in water for at least 2-4 hours or overnight; drain.
- Place the soaked beans in a pot with fresh water, bring to a boil, then reduce heat and simmer until very soft, about 60-90 minutes. Drain most of the cooking liquid, leaving a little for moisture.
- While beans are cooking, chop the onion, Scotch bonnet pepper, and red bell pepper. In a separate pot or large skillet, heat the palm oil over medium heat.
- Add the chopped onion to the hot palm oil and sauté until softened and fragrant, about 3-5 minutes. Then add the Scotch bonnet and red bell pepper and cook for another 5 minutes.
- Add the cooked beans, corn kernels, crayfish powder, and crumbled seasoning cube to the pot with the sautéed aromatics. Stir well to combine all ingredients.
- Add a splash of water if needed to reach desired consistency, then cover and simmer on low heat for 10-15 minutes, allowing flavors to meld. Taste and adjust seasoning if necessary before serving hot.
