  1. Rinse the adzuki beans thoroughly under cold water, then transfer them to a large pot. Add enough fresh water to cover the beans by at least three times their volume.
  2. Bring the water to a boil over high heat, then reduce the heat to low and simmer for about 60-70 minutes, or until the beans are very tender. Skim off any foam that rises to the surface.
  3. Once the beans are tender, stir in the granulated sugar and a pinch of salt until they are fully dissolved. Taste and adjust sweetness if desired.
  4. Continue to simmer for another 10-15 minutes, allowing the flavors to meld and the soup to thicken slightly to your desired consistency. You can gently mash some beans for a creamier texture.
