👨‍🍳 Instructions

  1. In a small bowl, whisk together the cornstarch with a quarter cup of almond milk to create a smooth slurry. Set aside.
  2. In a medium saucepan, combine the remaining almond milk, granulated sugar, and a pinch of salt. Heat over medium heat, stirring occasionally, until the sugar dissolves and the milk is hot but not boiling.
  3. Gradually whisk the cornstarch slurry into the hot almond milk mixture, stirring continuously for 2-3 minutes until the mixture thickens significantly to a pudding-like consistency.
  4. Remove the saucepan from the heat and stir in the vanilla extract. Pour the blancmange mixture into individual ramekins or a single large serving dish.
  5. Allow to cool to room temperature, then cover and refrigerate for at least 3-4 hours, or until fully set. Serve chilled, optionally garnished with fresh berries or toasted almond slivers.
