👨🍳 Instructions
- In a small bowl, whisk together the cornstarch with a quarter cup of almond milk to create a smooth slurry. Set aside.
- In a medium saucepan, combine the remaining almond milk, granulated sugar, and a pinch of salt. Heat over medium heat, stirring occasionally, until the sugar dissolves and the milk is hot but not boiling.
- Gradually whisk the cornstarch slurry into the hot almond milk mixture, stirring continuously for 2-3 minutes until the mixture thickens significantly to a pudding-like consistency.
- Remove the saucepan from the heat and stir in the vanilla extract. Pour the blancmange mixture into individual ramekins or a single large serving dish.
- Allow to cool to room temperature, then cover and refrigerate for at least 3-4 hours, or until fully set. Serve chilled, optionally garnished with fresh berries or toasted almond slivers.
