👨‍🍳 Instructions

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onion and green chillies, sauté until the onion turns translucent.
  3. Stir in ginger-garlic paste and cook for one minute until fragrant.
  4. Add chopped tomatoes and cook until they soften and the oil separates.
  5. Mix in turmeric powder, coriander powder, and red chilli powder; cook for 1-2 minutes, stirring constantly.
  6. Add the diced potatoes and mix well to coat them with the masala. Cover and cook on low heat for 10-12 minutes, stirring occasionally, until potatoes are half-cooked.
  7. Add the diced bell peppers and mix. Cover and cook for another 8-10 minutes, or until both potatoes and bell peppers are tender.
  8. Stir in garam masala. Garnish with fresh coriander leaves and serve hot.
