- Boiled and Diced Potatoes 200 g · 154 kcal

👨🍳 Instructions
- Boil 2-3 medium-sized potatoes until tender, then peel and dice them into 1-inch cubes. Set aside.
- Heat vegetable oil in a large pan or kadai over medium heat. Add cumin seeds and let them splutter for about 15-20 seconds.
- Add the chopped green chili to the pan and sauté for a few seconds until fragrant.
- Add the diced boiled potatoes to the pan. Gently stir to coat them with the oil and spices.
- Sprinkle turmeric powder, coriander powder, and salt over the potatoes. Mix well and cook for 5-7 minutes, stirring occasionally, until the potatoes are lightly browned.
- Add amchur powder (dried mango powder) and mix thoroughly. Cook for another 2 minutes.
- Garnish with freshly chopped coriander leaves before serving. Serve hot with roti, paratha, or as a side dish.
