👨‍🍳 Instructions

  1. Boil 2-3 medium-sized potatoes until tender, then peel and dice them into 1-inch cubes. Set aside.
  2. Heat vegetable oil in a large pan or kadai over medium heat. Add cumin seeds and let them splutter for about 15-20 seconds.
  3. Add the chopped green chili to the pan and sauté for a few seconds until fragrant.
  4. Add the diced boiled potatoes to the pan. Gently stir to coat them with the oil and spices.
  5. Sprinkle turmeric powder, coriander powder, and salt over the potatoes. Mix well and cook for 5-7 minutes, stirring occasionally, until the potatoes are lightly browned.
  6. Add amchur powder (dried mango powder) and mix thoroughly. Cook for another 2 minutes.
  7. Garnish with freshly chopped coriander leaves before serving. Serve hot with roti, paratha, or as a side dish.
