👨‍🍳 Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened, about 5-7 minutes.
  2. Add the minced garlic, diced potatoes, and sliced carrots to the pot. Sauté for another 3-5 minutes, stirring occasionally.
  3. Stir in the tomato paste and cook for 1 minute to deepen its flavor. Then add the canned chopped tomatoes, water, and season with salt and pepper.
  4. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 20 minutes. Stir in the frozen peas and continue to simmer for another 10-15 minutes, or until vegetables are tender and sauce has thickened slightly.
  5. Remove from heat and stir in the fresh chopped dill and parsley. Let it rest for a few minutes before serving. Serve warm, optionally with a drizzle of fresh olive oil and a slice of feta cheese on the side.
