👨🍳 Instructions
- If using dried fava beans, soak them overnight in cold water; drain and peel them before cooking. This recipe assumes pre-soaked and peeled fava beans.
- Heat olive oil in a pot over medium heat, then add minced garlic and sauté for 1-2 minutes until fragrant but not browned.
- Add the peeled fava beans and turmeric powder to the pot; sauté for another 3-5 minutes, stirring occasionally.
- Stir in the chopped fresh dill and pour in the water. Bring the mixture to a boil, then reduce heat, cover, and simmer for 25-30 minutes until the fava beans are tender.
- Season the stew with salt and black pepper to taste. Gently crack the eggs directly into the simmering stew, spacing them out.
- Cover the pot and cook for another 5-7 minutes, or until the egg whites are set and the yolks are cooked to your preference. Serve hot, traditionally with rice.
