👨‍🍳 Instructions

  1. If using dried fava beans, soak them overnight in cold water; drain and peel them before cooking. This recipe assumes pre-soaked and peeled fava beans.
  2. Heat olive oil in a pot over medium heat, then add minced garlic and sauté for 1-2 minutes until fragrant but not browned.
  3. Add the peeled fava beans and turmeric powder to the pot; sauté for another 3-5 minutes, stirring occasionally.
  4. Stir in the chopped fresh dill and pour in the water. Bring the mixture to a boil, then reduce heat, cover, and simmer for 25-30 minutes until the fava beans are tender.
  5. Season the stew with salt and black pepper to taste. Gently crack the eggs directly into the simmering stew, spacing them out.
  6. Cover the pot and cook for another 5-7 minutes, or until the egg whites are set and the yolks are cooked to your preference. Serve hot, traditionally with rice.
