👨‍🍳 Instructions

  1. Preheat oven to 200°C (400°F). In a food processor, combine cooked chickpeas, chopped onion, garlic, fresh parsley, chickpea flour, and spices (cumin, coriander). Pulse until well combined but still slightly coarse.
  2. Form the falafel mixture into small patties or balls. Lightly brush a baking sheet with olive oil, then arrange the falafel on it.
  3. Bake for 20-25 minutes, flipping halfway through, until golden brown and cooked through.
  4. While falafel bakes, prepare the tahini sauce: whisk tahini, lemon juice, minced garlic, and a splash of water until smooth and creamy. Adjust consistency with more water if needed.
  5. Warm the whole wheat pita bread. Spread a generous amount of tahini sauce on the inside of the pita.
  6. Fill the pita with the baked falafel patties, fresh lettuce, sliced tomatoes, cucumbers, and pickled turnips. Serve immediately.
