  1. For the dough, combine all-purpose flour and a pinch of salt in a bowl, then rub in the vegetable oil until the mixture resembles coarse breadcrumbs.
  2. Gradually add water and knead into a firm, smooth dough; cover and let it rest for 20-30 minutes.
  3. For the filling, heat vegetable oil in a pan, add cumin seeds, then sauté finely chopped onion, ginger, and green chilies until fragrant.
  4. Add coriander powder, turmeric powder, garam masala, and amchur powder; cook for another minute until spices are fragrant.
  5. Stir in the mashed potatoes, green peas, and salt to taste; mix well and cook for 2-3 minutes until heated through, then let the filling cool completely.
