  • Sweet Potato 200 g · 172 kcal
  • Olive Oil 5 g · 45 kcal
  • Shredded Cheddar Cheese 30 g · 120 kcal
  • Light Sour Cream 30 g · 60 kcal
  • Green Onions (Scallions), chopped 10 g · 3 kcal

👨‍🍳 Instructions

  1. Preheat oven to 200°C (400°F). Scrub sweet potatoes clean, pierce several times with a fork, and rub lightly with olive oil.
  2. Bake sweet potatoes directly on the oven rack for 45-60 minutes, or until very tender. Let them cool slightly, then cut each in half lengthwise.
  3. Carefully scoop out most of the flesh from each sweet potato half, leaving about 1/4 inch attached to the skin to maintain structure. Place the scooped flesh into a mixing bowl.
  4. To the mixing bowl, add the light sour cream, half of the shredded cheddar cheese, and half of the chopped green onions. Season with salt, pepper, and paprika, then mash and mix until well combined.
  5. Spoon the sweet potato filling back into the empty sweet potato skins, mounding it slightly. Arrange the filled skins on a baking sheet.
  6. Sprinkle the remaining shredded cheddar cheese over the filled skins. Bake for another 10-15 minutes, or until the cheese is melted and bubbly and the skins are heated through.
  7. Garnish with the remaining fresh green onions before serving warm.
