👨‍🍳 Instructions

  1. Wash and trim the okra by carefully cutting off the stem end without exposing the seeds.
  2. In a pot, heat the olive oil over medium heat, then add chopped onion and sauté until softened and translucent, about 5 minutes.
  3. Add minced garlic, ground cumin, and ground coriander to the pot, stirring for 1 minute until fragrant.
  4. Stir in the trimmed okra, crushed tomatoes, drained chickpeas, vegetable broth, and salt to taste. Bring to a simmer.
  5. Reduce heat, cover, and simmer for 20-25 minutes, or until the okra is tender and the flavors have melded. Stir occasionally.
