👨🍳 Instructions
- Wash okra thoroughly and trim the stem ends conically, being careful not to cut into the pods. Place them in a bowl with a splash of white wine vinegar or lemon juice for 15-30 minutes, then pat them completely dry.
- In a large pot or Dutch oven, heat the olive oil over medium heat. Sauté the chopped onion until softened and translucent, then add the minced garlic and cook for another minute until fragrant.
- Add the prepared okra to the pot and sauté gently for 5-7 minutes until slightly browned. Stir in the crushed tomatoes and water.
- Bring the mixture to a gentle boil, then reduce the heat to low, cover, and simmer for 40-50 minutes, or until the okra is tender and the sauce has thickened. Stir occasionally to prevent sticking.
- Season with salt and freshly ground black pepper to taste. Stir in chopped fresh parsley just before serving. Serve hot, often with crusty bread.
