- Phyllo dough 500 g · 1500 kcal
- Sirene cheese (or Feta) 500 g · 1300 kcal
- Large eggs 200 g · 300 kcal
- Plain yogurt 200 g · 120 kcal
- Unsalted butter, melted 100 g · 717 kcal
👨🍳 Instructions
- Preheat your oven to 180°C (350°F) and lightly grease a round or rectangular baking dish.
- In a large bowl, crumble the Sirene cheese (or feta) and set aside. In another bowl, whisk together the eggs, plain yogurt, and a pinch of baking soda until well combined.
- Add the crumbled cheese to the egg and yogurt mixture, stirring gently to combine. This is your banitsa filling.
- Place one sheet of phyllo dough on a clean surface, brush generously with melted butter, then place another sheet on top and brush again.
- Spread about 1/8 of the cheese mixture evenly over the top phyllo sheet. Carefully roll the two phyllo sheets with the filling into a loose cylinder.
- Coil the rolled phyllo into a spiral shape and place it in the center of your prepared baking dish. Repeat this process with the remaining phyllo sheets and filling, coiling each subsequent roll around the previous one to form a large spiral.
- Once all the phyllo rolls are arranged, pour any remaining melted butter or egg-yogurt mixture evenly over the top of the banitsa.
- Bake for 40-45 minutes, or until the banitsa is golden brown and cooked through. The exact time may vary depending on your oven.
- Remove from oven and let it cool slightly for about 10-15 minutes before slicing and serving. This allows the layers to set.
