👨🍳 Instructions
- If using dried barbunya beans, soak them overnight. Drain and rinse the beans, then boil them in fresh water until tender, about 30-40 minutes; drain.
- Finely chop the onion, mince the garlic, and dice the carrots and tomatoes. Roughly chop the fresh parsley.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 5-7 minutes.
- Add the diced carrots and minced garlic to the pot, cooking for another 3-5 minutes until the carrots begin to soften.
- Stir in the diced tomatoes (or crushed canned tomatoes), cooked barbunya beans, salt, and black pepper. Add enough water to just barely cover the beans.
- Bring to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes, or until the beans are very tender and the sauce has thickened slightly.
- Remove from heat and stir in the chopped fresh parsley. Taste and adjust seasoning if needed.
- Barbunya Pilaki is traditionally served chilled or at room temperature. Allow it to cool completely before serving.
