- Prepare the jackfruit: Drain and rinse the canned young green jackfruit thoroughly. Use your hands or two forks to shred the jackfruit pieces, removing any tough core parts.
- Sauté aromatics: Heat olive oil in a pan over medium heat. Add chopped red onion and cook until softened, about 5 minutes, then stir in minced garlic, smoked paprika, and cumin, cooking for 1 minute until fragrant.
- Cook jackfruit filling: Add the shredded jackfruit to the pan, along with BBQ sauce and water. Stir well to combine, then bring to a simmer. Reduce heat to low, cover, and cook for 15-20 minutes, stirring occasionally, until the jackfruit is tender and the sauce has thickened.
- Prepare coleslaw: While the jackfruit cooks, combine shredded cabbage, carrot, vegan mayonnaise, apple cider vinegar, and maple syrup in a medium bowl. Mix thoroughly and season with salt and pepper to taste.
