  1. In a medium bowl, mash the drained black beans with a fork or potato masher until mostly smooth but still with some texture; do not over-mash.
  2. Add the rolled oats, finely chopped yellow onion, minced garlic, and desired seasonings (e.g., cumin, chili powder) to the mashed beans. Mix well to combine.
  3. Form the mixture into a single patty. Heat olive oil in a non-stick pan over medium heat, then cook the bean patty for 5-7 minutes per side, until golden brown and heated through.
  4. While the patty cooks, prepare the tahini sauce by whisking tahini with a splash of water and a squeeze of lemon juice until smooth. Season with salt and pepper to taste.
  5. Warm the whole wheat tortilla slightly in a dry pan or microwave for about 15-20 seconds to make it pliable.
  6. Lay the warm tortilla flat. Spread a layer of tahini sauce, then add the cooked bean patty, shredded romaine lettuce, sliced tomato, sliced avocado, and thinly sliced red onion.
