👨‍🍳 Instructions

  1. In a large bowl, combine the masa harina with warm water and a pinch of salt; knead for about 5-7 minutes until a soft, pliable dough forms. Cover and let it rest for 10 minutes.
  2. Moisten your hands with a little vegetable oil or water. Take a golf-ball sized portion of dough and flatten it into a thick disc in the palm of your hand.
  3. Place about 1-2 tablespoons of refried beans in the center of the dough disc. Carefully bring the edges of the dough up and over the filling, pinching them together to seal.
  4. Gently flatten the sealed ball back into a disc, approximately 1 cm thick, making sure the filling is evenly distributed. Repeat with the remaining dough and filling.
  5. Heat a comal or non-stick griddle over medium heat. Cook each pupusa for 3-5 minutes per side, until golden brown and slightly puffed.
  6. Serve the Pupusas de Frijol immediately, traditionally accompanied by curtido (pickled cabbage slaw) and salsa roja.
