👨🍳 Instructions
- Grate peeled beetroot and finely chop onion; mince garlic. Combine 1 tablespoon flaxseed meal with 3 tablespoons water to make a flax egg, set aside for 5 minutes.
- Heat olive oil in a pan over medium heat, then sauté the chopped onion and minced garlic until softened, about 5-7 minutes.
- In a large bowl, combine the grated beetroot, sautéed onion and garlic, rolled oats, flax egg, and your preferred spices. Season with salt and black pepper.
- Mix well until a cohesive mixture forms, then shape the mixture into two burger patties of your desired size.
- Cook the patties in a lightly oiled pan over medium heat for 5-7 minutes per side, until browned and heated through.
- Lightly toast the burger buns. Spread vegan mayonnaise on both halves.
- Assemble the burger by placing a beetroot patty on the bottom bun, then topping with fresh lettuce, tomato slices, pickles, and the top bun.
