- Peel and chop beetroots into small, uniform cubes. Boil or steam them until tender, then drain and set aside.
- Heat vegetable oil in a pan over medium heat. Add mustard seeds and let them splutter.
- Add chopped onion, green chillies, and curry leaves. Sauté until the onion turns translucent.
- Stir in ginger garlic paste and cook for another minute until fragrant.
- Add turmeric powder, cumin powder, and coriander powder. Sauté for 30 seconds, stirring constantly to prevent burning.
- Pour in the coconut milk, water, and tamarind paste. Bring the mixture to a gentle simmer.
- Add the cooked beetroot cubes to the simmering curry. Season with salt to taste.
- Simmer gently for 5-7 minutes, allowing the flavors to meld. Serve hot with rice or flatbreads.
