👨‍🍳 Instructions

  1. Preheat your oven to 200°C (390°F). Wash the beetroots, trim the ends, and wrap them individually in foil.
  2. Roast the beetroots for 45-60 minutes, or until they are fork-tender. Let them cool completely, then peel and roughly chop them.
  3. In a food processor, combine the chopped beetroot, tahini, lemon juice, minced garlic, and salt. Process until smooth.
  4. If the mutabal is too thick, add a tablespoon of cold water at a time until you reach your desired consistency. Taste and adjust seasoning as needed.
  5. Transfer the beetroot mutabal to a serving bowl. Drizzle with a little extra olive oil and garnish with fresh parsley or mint before serving.
