  1. Thinly slice the onions and place them in a large mixing bowl; add a pinch of salt and massage them gently for 2-3 minutes to release moisture.
  2. Add gram flour, ginger-garlic paste, chopped green chilies, fresh coriander, cumin powder, coriander powder, turmeric powder, and chili powder to the bowl.
  3. Gradually add a small amount of water (if needed) and mix everything thoroughly to form a thick, cohesive batter; avoid adding too much water as onions will release more liquid.
  4. Heat vegetable oil in a deep pan or wok over medium-high heat until it reaches about 170-175°C (340-347°F).
  5. Carefully drop small spoonfuls of the bhaji mixture into the hot oil, ensuring not to overcrowd the pan; fry in batches for 4-6 minutes, turning occasionally, until golden brown and crisp.
  6. Remove the fried bhaji with a slotted spoon and place them on a plate lined with paper towels to drain excess oil; serve hot with chutney.
