👨‍🍳 Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat; add diced onion and bell pepper and sauté for 5-7 minutes until softened.
  2. Add minced garlic, ground cumin, and dried oregano; cook for another minute until fragrant, stirring constantly.
  3. Drain and rinse the canned black beans, then add them to the pot along with the vegetable broth and a pinch of salt. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Carefully ladle about half of the soup into a blender and blend until smooth; return the blended soup to the pot to thicken the remaining soup. Stir well.
  5. Stir in the fresh lime juice and season with additional salt and pepper to taste. Garnish with fresh cilantro before serving.
