👨🍳 Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat; add diced onion and bell pepper and sauté for 5-7 minutes until softened.
- Add minced garlic, ground cumin, and dried oregano; cook for another minute until fragrant, stirring constantly.
- Drain and rinse the canned black beans, then add them to the pot along with the vegetable broth and a pinch of salt. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Carefully ladle about half of the soup into a blender and blend until smooth; return the blended soup to the pot to thicken the remaining soup. Stir well.
- Stir in the fresh lime juice and season with additional salt and pepper to taste. Garnish with fresh cilantro before serving.
