👨🍳 Instructions
- Heat a small amount of vegetable oil in a skillet over medium heat. Sauté finely diced onion until softened, then add minced garlic and cook for another minute until fragrant.
- Add drained black beans, ground cumin, and chili powder to the skillet. Mash the beans lightly with a fork or potato masher, incorporating all ingredients.
- Stir in the lime juice and season the black bean mixture with salt to taste. Remove from heat and set aside.
- Warm the corn tortillas slightly in a microwave or dry skillet to make them pliable. This prevents them from cracking when rolled.
- Place about 2 tablespoons of the black bean filling on one edge of each warm tortilla. Roll them up tightly into a taquito shape.
- Heat the remaining vegetable oil in a large skillet or deep pot over medium-high heat. Carefully place the taquitos seam-side down in the hot oil.
