  1. Heat a small amount of vegetable oil in a skillet over medium heat. Sauté finely diced onion until softened, then add minced garlic and cook for another minute until fragrant.
  2. Add drained black beans, ground cumin, and chili powder to the skillet. Mash the beans lightly with a fork or potato masher, incorporating all ingredients.
  3. Stir in the lime juice and season the black bean mixture with salt to taste. Remove from heat and set aside.
  4. Warm the corn tortillas slightly in a microwave or dry skillet to make them pliable. This prevents them from cracking when rolled.
  5. Place about 2 tablespoons of the black bean filling on one edge of each warm tortilla. Roll them up tightly into a taquito shape.
  6. Heat the remaining vegetable oil in a large skillet or deep pot over medium-high heat. Carefully place the taquitos seam-side down in the hot oil.
  7. Fry the taquitos for 2-3 minutes per side, turning occasionally, until they are golden brown and crispy all over. Be careful not to overcrowd the pan.
