👨‍🍳 Instructions

  1. Shuck the corn cobs and carefully remove the kernels using a sharp knife; finely chop the epazote leaves.
  2. In a pot, combine the corn kernels with enough water to cover them, add the chopped epazote and a pinch of salt.
  3. Bring to a boil, then reduce heat and simmer for 10-15 minutes, or until the corn is tender.
  4. Drain the corn, reserving a small amount of the cooking liquid if desired, and transfer to serving cups.
  5. Top each serving with a dollop of mayonnaise, a squeeze of fresh lime juice, crumbled Cotija cheese, and a sprinkle of chili powder.
  6. Serve immediately, optionally with a spoon to mix the ingredients.
