Bryndzové Halušky (Slovak Potato Dumplings with Sheep Cheese and Bacon)

- Potatoes 250 g · 192 kcal
- All-purpose flour 75 g · 270 kcal
- Bryndza cheese 75 g · 195 kcal
- Smoked bacon 50 g · 225 kcal
👨🍳 Instructions
- Peel and finely grate the potatoes, then squeeze out as much excess liquid as possible using a clean cloth or potato ricer.
- In a large bowl, combine the grated potatoes with all-purpose flour and a pinch of salt to form a sticky dough; do not overmix.
- Bring a large pot of salted water to a rolling boil.
- Using a halušky press or the back of a cutting board and a knife, push small pieces of dough into the boiling water.
- Cook the dumplings for 2-3 minutes after they float to the surface, then drain them well.
- While the dumplings cook, dice the smoked bacon and fry it in a pan over medium heat until crispy; set aside the crispy bacon and reserve the rendered fat.
- In a large bowl, combine the drained halušky with the bryndza cheese and a spoonful or two of the reserved bacon fat, mixing until the cheese melts and coats the dumplings.
- Serve the Bryndzové Halušky immediately, garnished with the crispy bacon bits.
