  1. Preheat oven to 200°C (400°F). Toss diced butternut squash with olive oil, minced garlic, salt, and pepper on a baking sheet; roast for 20-25 minutes until tender and slightly caramelized.
  2. In the last 5 minutes of roasting, add fresh sage leaves to the baking sheet and roast until fragrant.
  3. Warm the whole wheat tortilla in a dry pan or microwave for 15-20 seconds to make it pliable.
  4. Spread crumbled goat cheese evenly over the warm tortilla.
  5. Arrange fresh spinach leaves over the cheese, then spoon the roasted butternut squash and sage mixture down the center.
  6. Fold in the sides of the tortilla, then roll it up tightly from the bottom to create a wrap. Serve immediately.
