👨‍🍳 Instructions

  1. Wash and chop all vegetables: finely shred the green cabbage, dice the carrots, onions, and celery, and set aside.
  2. Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onions, carrots, and celery, sautéing for 5-7 minutes until softened.
  3. Add the shredded cabbage and canned diced tomatoes to the pot. Stir well and cook for another 5 minutes, allowing the cabbage to slightly wilt.
  4. Pour in the vegetable broth, then add enough water to cover all vegetables. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes until vegetables are tender.
  5. Season with salt and black pepper to taste. Ladle the hot soup into bowls and garnish with fresh chopped dill before serving.
