👨🍳 Instructions
- Prepare the pizza dough by combining flour, water, yeast, a pinch of salt, and a drizzle of olive oil; knead until smooth and elastic, then let it rise in a warm place until doubled in size (about 60-90 minutes).
- Preheat oven to 220°C (425°F) and prepare the filling by combining ricotta cheese, shredded mozzarella, chopped cooked ham, and crushed tomatoes in a bowl; mix well.
- Punch down the risen dough and divide it into portions; on a lightly floured surface, roll each portion into a thin, round shape (about 20-25 cm or 8-10 inches in diameter).
- Spoon the filling onto one half of each dough round, leaving a border around the edge; fold the other half of the dough over the filling to create a half-moon shape.
- Crimp the edges tightly with a fork or by rolling them inwards to seal the calzone; place the calzones on a baking sheet lined with parchment paper.
- Brush the tops of the calzones with a little olive oil for a golden crust, then bake for 20-25 minutes, or until deeply golden brown and puffed.
- Let the calzones cool slightly before serving; they are delicious served warm, optionally with extra tomato sauce for dipping.
