  1. Peel and deseed the cantaloupe, then cut the flesh into chunks; combine the cantaloupe chunks, sugar, and water in a blender.
  2. Blend until the mixture is completely smooth, then strain it through a fine-mesh sieve into a shallow freezer-safe dish to remove any pulp.
  3. Stir in the fresh lemon juice, then cover the dish and place it in the freezer.
  4. After about 1 hour, remove the dish from the freezer and use a fork to scrape the frozen edges towards the center.
  5. Return the dish to the freezer and repeat the scraping process every 30-45 minutes until the entire mixture is frozen into fine, flaky crystals, usually taking 3-4 hours.
  6. Serve the cantaloupe granita immediately in chilled glasses or bowls for a refreshing treat.
