👨‍🍳 Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and sauté until softened, about 3-5 minutes.
  2. Add minced garlic and grated fresh ginger; cook for another minute until fragrant, stirring constantly to prevent burning.
  3. Stir in the chopped carrots and pour in the vegetable broth. Bring the mixture to a boil, then reduce heat, cover, and simmer for 15-20 minutes until carrots are very tender.
  4. Carefully transfer the soup to a blender and blend until completely smooth. Alternatively, use an immersion blender directly in the pot.
  5. Return the blended soup to the pot, if using a stand blender. Season with salt and freshly ground black pepper to taste. Serve hot, optionally garnished with fresh cilantro or parsley.
