- Peel the yuca roots thoroughly, removing all the brown skin and the fibrous core. Grate the peeled yuca finely into a large bowl.
- Place the grated yuca into a clean cheesecloth or a fine mesh bag. Squeeze out as much liquid as possible until the yuca meal is dry and crumbly.
- Sieve the dried yuca meal through a fine-mesh strainer to remove any lumps and ensure a consistent, fine texture.
- Heat a flat griddle or comal over medium heat. Lightly sprinkle a thin, even layer of the sieved yuca meal onto the hot surface, forming a round shape.
- Allow the casabe to cook for 2-3 minutes per side, or until it becomes firm, slightly translucent, and develops golden-brown spots. Flip carefully and cook the other side.
