👨‍🍳 Instructions

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper. Cut the cauliflower into bite-sized florets.
  2. In a large bowl, whisk together the all-purpose flour, plant-based milk, garlic powder, onion powder, smoked paprika, and a pinch of salt and pepper to form a smooth batter.
  3. Dip each cauliflower floret into the batter, ensuring it's fully coated, then place them evenly spaced on the prepared baking sheet.
  4. Bake for 20-25 minutes, flipping halfway through, until the cauliflower is tender and the batter is lightly golden and crispy.
  5. While the cauliflower bakes, melt the vegan butter in a small saucepan over low heat. Stir in the hot sauce until well combined.
  6. Transfer the baked cauliflower to a large bowl and pour the buffalo sauce over it. Toss gently until all florets are evenly coated.
  7. Return the sauced cauliflower to the baking sheet and bake for another 10-15 minutes, or until the sauce is slightly caramelized and the wings are sticky.
  8. Serve immediately with your favorite dipping sauce, such as vegan ranch or blue cheese dressing, and celery sticks.
