👨🍳 Instructions
- Preheat your oven to 200°C (180°C fan/Gas Mark 6). Cut the cauliflower into bite-sized florets and steam or boil until just tender, about 5-7 minutes. Drain well.
- Meanwhile, melt the butter in a saucepan over medium heat. Stir in the flour and cook for 1 minute, stirring constantly, to make a roux.
- Gradually whisk in the milk, a little at a time, ensuring each addition is fully incorporated before adding more, until the sauce is smooth and thickened. Bring to a gentle simmer, stirring.
- Remove the saucepan from the heat and stir in most of the grated Cheddar cheese and the Dijon mustard until melted and smooth. Season with salt and black pepper to taste.
- Place the drained cauliflower in an ovenproof dish. Pour the cheese sauce evenly over the cauliflower, ensuring it's well coated. Sprinkle the remaining grated cheese on top.
- Bake for 20-25 minutes, or until golden brown and bubbling. Serve hot as a side dish or light main.
