👨‍🍳 Instructions

  1. Heat half of the vegetable oil in a large skillet or wok over medium-high heat. Add the whisked egg and scramble until just cooked through, then remove and set aside.
  2. Add the remaining vegetable oil to the skillet. Sauté the diced carrots and frozen peas for 3-4 minutes until slightly tender.
  3. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Stir in the riced cauliflower and cook for 5-7 minutes, stirring occasionally, until tender-crisp.
  5. Return the scrambled egg to the skillet. Pour in the soy sauce and sesame oil, stirring well to combine all ingredients.
  6. Garnish with sliced green onions and serve immediately.
