  1. Heat the vegetable oil in a large pot or deep pan over medium heat. Add the chopped onion and sauté until softened, about 5 minutes. Stir in the minced garlic, grated ginger, grated carrots, and diced bell peppers; cook for another 5-7 minutes until the vegetables start to soften.
