👨🍳 Instructions
- Heat the vegetable oil in a large pot or deep pan over medium heat. Add the chopped onion and sauté until softened, about 5 minutes. Stir in the minced garlic, grated ginger, grated carrots, and diced bell peppers; cook for another 5-7 minutes until the vegetables start to soften.
- Stir in the curry powder and chili powder, cooking for 1 minute until fragrant. Then, add the canned diced tomatoes and canned baked beans (with their sauce).
