👨‍🍳 Instructions

  1. To make the pastry, combine flour, cold butter, and a pinch of salt in a bowl. Rub the butter into the flour until it resembles breadcrumbs.
  2. Gradually add cold water, mixing until a dough forms. Wrap in cling film and chill for 30 minutes.
  3. For the filling, melt butter in a large pan and sauté sliced onions over medium-low heat for 15-20 minutes until very soft and lightly golden.
  4. Preheat oven to 190°C (375°F). Roll out two-thirds of the chilled pastry and line a 23cm pie dish.
  5. In a large bowl, combine the softened onions, grated Cheddar cheese, eggs, milk, and cream. Season with a pinch of nutmeg, salt, and black pepper.
  6. Pour the filling into the pastry-lined dish. Roll out the remaining pastry and place it over the filling to create a lid, sealing the edges well.
  7. Cut a small slit in the center of the lid for steam to escape. Bake for 40-50 minutes, or until the pastry is golden brown and the filling is set.
  8. Let the pie cool for 10-15 minutes before serving.
